Gimme Stew by the Fire, gimme that which builds me higher!
Stewing over it for hours… this creamy chicken & bacon dish is so amazing – your neighbours will be jealous as they will be able to smell the savoury goodness from their place! Who would have thought a creamy chicken dinner could be made without a bit of cream or milk in sight? Paleo-friendly, wholesome, dairy-free, gluten-free, healthy, hearty and delectable.
4-5 chicken thighs, diced
3 rashes of bacon, rind removed & cut in half
1 onion, sliced
2 garlic cloves, crushed
3 eschallots, sliced finely
1 large or 2 medium sweet potatoes, peeled & cut into large chunks
3 medium carrots, peeled & sliced
2 celery stalks, diced
1/2 cup coconut milk
1 1/2 cups chicken broth
1 tsp thyme
2 tbsp arrowroot powder
2 tbsp coconut oil
Pinch of pepper to season

Coz there’s no use crying over Diced Onions.
No… you have to rise to the Eschallot echelon and be Gallent with Garlic
But not of the night and the sweet Spud of the farmer will not harm ya
But adds to the belly like coconut armour, well oiled and milky, slick, thick & silky.

Because a course is a course of course!
Let’s do this:
Start by preheating your oven to 180°C and line a baking tray with foil. Lay the bacon rashes on the tray and place in the oven once heated. Cook the bacon in the oven for 5-10 mins per side, until it’s nicely cooked & starting to crisp up. While the oven preheats, prepare your vegetables & put them all in the slow cooker.
Melt 1 tbsp of coconut oil in a frying pan and on med-high heat brown the onions. Add garlic & eschallots, cook for 1 more minute and transfer to the slow cooker with thyme & pepper.
Don’t forget about your bacon! This is probably perfect timing to turn it over in the oven. Add another tablespoon of coconut oil to the pan and brown the chicken. Add chicken to the pot, then pour the coconut milk & chicken broth over the lot and give it a good stir.
Once your bacon is cooked, take it out & pat the excess oil from bacon with paper towel if you wish. Cut the bacon into strips and add to the slow cooker pot, stirring gently to combine. Cover the slow cooker and cook on high for 4 hours, stirring occasionally. By now your house should smell amazing!!! Of course, there’s nothing like the smell of bacon cooking…
After 4 hours, turn the slow cooker down to low and make a paste with the arrowroot – combine arrowroot powder with approx. 25mL water then add it to the slow cooker and stir it through well. Cook for another half an hour on low. Have you noticed how amazing your house smells?! Ohhhhh my. Your sauce should be nice and thick now, all the veggies should be cooked through and soft. Let’s serve! It would go perfect with some lightly seared green beans, some paleo-friendly toast or just fill the damn bowl right up and eat like this.
