I almost didn’t get the chance to take a picture as they were eaten & divided up so quick! Perfect replacement for pasta/spaghetti – gluten-free, paleo & low-carb friendly.
2 medium zucchini’s – julienned
Zest of 1/2 lemon
2 cloves garlic, crushed
Sprinkling of finely chopped or dried thyme/parsley/dill
1tbsp olive or coconut oil
Pinch of sea salt
Let’s do it:
Heat oil in the pan on high heat. Add garlic, zucchini, lemon zest, salt & thyme, then toss through well. Cook on high heat for 1-2 mins, until zucchini is soft yet a touch crunchy. Oh boy. I dare you not to eat it straight away.
